Veal Osso Buco

Traditionally-prepared Osso Bucco

Osso Buco (translation: “Bone with a Hole”) is a staple in traditional Milanese cuisine.  Basically, it’s a veal shank cut crosswise, revealing a thick marrow-rich bone in the center.  The bone is the star of the show – it adds richness and flavor as the meat is braised slowly at a low temperature.  In the end, the meat is fork-tender and literally melts in your mouth.  Top off with freshly made gremolata for a truly authentic taste.
