The Parson’s Nose.  Turkey Butt.  The-Part-That-Goes-Over-The-Fence-Last.  All of these describe the magnificently decadent Turkey Tail.  Categorized as a “dark meat”, the turkey tail is a gland with a high fat content – 36 grams per 4-ounce serving – due to the oil inside that the turkey uses to preen its feathers.  The high fat content also makes it an indulgent treat.  Turkey tails are enjoyed by various cultures around the world, usually braised, smoked, roasted, or served adobo-style.
