One of the most popular fish in the country, Striped Bass owes its immense popularity to its delicate flesh and sweet, almost buttery flavor. Striped bass is absolutely delicious sauteed, broiled, pan fried or grilled, although many cooks like to oven-roast this fish, sometimes en papillote, sometimes encased in a layer of salt (this method allows the fish to cook evenly and steam in its own juices, resulting in a fish that’s tender, moist, and flavorful).
