Baked Porgies in garlic sauce

Porgies are found in the deeper waters of the Atlantic, particularly in Long Island Sound and off the coasts of Florida and the Bahamas.  Once discarded as bycatch, porgies are becoming increasingly popular with their mild, tender, and slightly sweet flavor. Porgies can be prepared in a variety of ways:  They can be grilled, baked or fried in a hot skillet. Its subtle flavor also makes the porgy a perfect fish to use in making ceviche.
