Mutton Snapper are found in waters throughout the Florida Keys, as well as the Western Atlantic and the Gulf of Mexico. The flesh of this fish is meaty and tender but firm. Mutton snapper can be pan-fried on high heat, giving it a nice crust but still maintaining its tenderness on the inside. Mutton snapper can be prepared in a number of ways, including baked, pan-fried, broiled or grilled. This fish pairs nicely with mango salsa.
