Like other hard-shell clams, Middle Neck Clams are a great source of iron and protein.  They also contain B-vitamins and Omega 3 fatty acids, making Middle Necks an essential part of a heart-healthy diet.  They are also surprisingly rich in Vitamin C, Potassium, and a host of other minerals.  Middle Necks are delicious steamed in white wine with butter and a bit of garlic.  Serve with a hearty crusty bread to sop up the tasty broth!
