Here is another Florida Favorite! Lane Snapper is abundant off our shores. They live throughout the gulf of Mexico and the Caribbean, in reefs, sandy bottoms with algae, and are abundant in areas with sea grass. Lane snapper cooks up fast, and its light flavor makes it an excellent fish for ceviche. They can also be baked, grilled, broiled, or pan-fried. If you cook with a sauce, make sure the sauce is light and not overwhelming.
