Crabmeat (Claw)

Claw Crabmeat is the least expensive of the crabmeats, and has a bold, rich flavor. Generally, the meat comes from the claw of the Blue Crab, as well as the swimming fins. Because these muscles were active all the time, claw crabmeat tends to be darker, with a heartier flavor than the less active muscles. This makes claw crabmeat perfect for use in soups, chowders and bisques, or any recipe that calls for crab meat with a strong, hearty flavor.
