Our most popular whole poultry item, fryers are young, tender chickens that can be broiled, baked, stewed…and, of course, fried. Fryers are sold whole, halved, quartered, 8-cut, 9-cut, or curry-cut (also known as “brown stew” cut). In addition, they can also be butterflied or spatchcocked (where the backbone is removed). The price difference between a whole and a cut-up fryer is so insignificant that many people opt to purchase the fryer cut up to their specifications.
