The secret to a perfectly steamed (and not rubbery) Cherrystone Clam is to remove the pan from the heat just as the clams start to open.  Cherrystones are normally steamed, but they are also great in chowders or pasta sauces.  Their size makes them perfect for stuffing and broiling. Cherrystones are the star of the ever-popular Clams Casino.  Some folks even eat them raw. (NOTE:  Raw shellfish should not be consumed by people who are immunocompromised.)
