Once considered a luxury that is served only during holidays, capons are especially valued for their abundance of white meat and are more flavorful than fryers or other hens. A capon is a rooster that has been neutered and fattened. It is perfect for roasting, but can also be stewed or braised such as in the popular French dish Coq au Vin. Delaware’s poultry products are all-natural, are hormone-free and raised without the use of antibiotics.
