Brisket

What started out as an overlooked cheap cut of meat is now a legend in the barbecue world. Brisket contains a lot of connective tissue, so a method like braising or smoking is often used to tenderize the meat. Whether it’s the main course of a Jewish holiday dinner, corned and served with cabbage for St. Patrick’s Day, or the star of a Texas barbecue, you can never go wrong with a good brisket.
