Beef Skirt Steak
Skirt Steak is the perfect cut of beef to use in steak fajitas or in stir-fry dishes like pepper steak, and they take a marinade very well (you don’t want to marinade for longer than 30 minutes). It’s one of the more flavorful cuts of meat on the steer. Because they are relatively thin, skirt steaks cook quickly – about 3 minutes on each side. Serve with a side of green chimichurri and some roasted bell peppers.
