Many foodies consider Bay Scallops to be the best-tasting of all the scallops.  Bay scallops have a mild, sweet flavor, and can be prepared in a variety of ways, including as a refreshing ceviche. Best of all, they’re easy to cook and take hardly any time at all to bring them from the pan to the plate.  Bay scallops can be served over a bed of pasta or rice, or by themselves with sauteed leafy greens.
