Grilled Ginger Chicken Teriyaki

Ingredients
1 cup soy sauce
1/2 cup sugar
2 tbsp mirin
1 piece of ginger, about 2 inches in length
5 garlic cloves
3 lb. boneless, skinless chicken thighs
Chives, for garnish
Sesame seeds, for garnish
Directions
- In a small saucepan, mix soy sauce, sugar and mirin together over medium-high heat. Once your sauce comes to a boil, remove it from the heat and set it aside to cool.
- Combine 3/4 cup of your teriyaki sauce, ginger, and garlic in a blender and blend until smooth.
- Marinate your chicken in the mixture for at least 1 hour, up to 24 hours.
- Oil your grill and place chicken to cook. Remove once the chicken is lightly charred and internal temperature is 175˚F – about 6 to 8 minutes per side.
- Transfer to a cutting board to slice. Serve with your teriyaki sauce over white rice. Garnish with chives and sesame seeds, and enjoy!
Notes
- You chicken can be marinated for up to 24 hours.
