Ingredients

  • 3 Florida bell peppers, sliced thin

  • 1 lb. Florida chicken breasts, sliced thin

  • 1 tbsp. Florida Key Lime juice

  • 1 sweet onion, sliced thin (optional)

  • 2 tbsp. Latin or taco seasoning (your favorite)

  • 1 tbsp. oil for cooking

  • Sea salt and fresh ground pepper, to taste

Directions

  • Preheat oven to 425 degrees F.
  • Add sliced peppers (and onions, if using) to half of the baking pan; drizzle with oil and sprinkle with seasoning. Add the sliced chicken to the other half of the pan; drizzle with oil and sprinkle with seasoning. Season everything with salt, pepper, and key lime juice.
  • Place in the oven for 15 to 20 minutes, or until chicken is thoroughly cooked.
  • Remove from the oven and serve with warm corn tortillas and your desired toppings.
