Amish Chicken Corn Noodle Soup
Simple, yet delicious and satisfying!
8 cups water
1 chicken back with ribs
2 boneless chicken breasts, cut into bite-sized pieces
16 oz. egg noodles, medium sized
1 cup frozen corn
3/4 tsp. black pepper
1 cup chopped onion
1 tsp. salt
1/2 cup chopped carrots
- In a large pot, sauté onion and carrots over medium heat for a few minutes.
- Add chicken back, water and salt & pepper. Bring to a boil.
- Stir in noodles. Let cook uncovered for 15 minutes.
- Add corn and chicken breast and bring back to a boil. Cook until the chicken breasts are cooked through. Serve with your favorite crackers or crusty bread.
